We operate a chain of restaurants centered on Japanese cuisine, including Japanese restaurants, soba shops, and Japanese-style ramen shops. It all began with my family’s restaurant, “Hinodeya Shokudo,” which was originally just a single eatery in a rural area of Saitama. but as the fourth-generation owner, through my experiences working overseas in Europe and the United States during my 20s and 30s, I came to realize the uniqueness of Japanese cuisine on the global stage—（ the concepts of umami and dashi ）—as well as the excellence of its culinary techniques. I resolved to make this wonderful Japanese food culture something universal that anyone, anywhere in the world, could enjoy ！ and to spread the culture of dashi ！. Rather than focusing on kaiseki or traditional Japanese cuisine, I was inspired to take on the challenge through ramen. I devised and executed a 10-year plan for international expansion, successfully entering the U.S. market in 2016.

Born from this journey, our restaurant, “Japanese-Style Ramen Hinodeya HIONODEYA RAMEN AND BAR,” is not merely an “overseas ramen shop” that simply sells ramen. We are a business established to put into practice our philosophy of spreading the culture of dashi and the allure of umami throughout the United States and the world through Japanese-style dashi ramen. Rather than relying on “tonkotsu”—the mainstream ramen style in the U.S. and around the world—we are competing with our Japanese-style “dashi ramen.” Our one-of-a-kind dashi ramen sets us apart; we have established a new genre of “Japanese-style ramen” created by chefs who have mastered Japanese cuisine. Even in the highly competitive California Bay Area—where the number of ramen shops continues to grow rapidly—we have consistently ranked at the top of the local charts since our opening and have been performing very well.

In 2016, we expanded into the U.S. and began operations at “Hinodeya” in San Francisco’s Japantown. Since then, we have grown into a popular ramen chain currently operating four company-owned locations in San Francisco, California, and one in Dallas, Texas, with our first company-owned location in Los Angeles set to open in September. We are still a company in the midst of growth. In line with our goal of establishing a five-region global presence—（ North America, ・ Central and South America, ・ Asia, ・ Oceania, and ・ Europe—by 2030, ） we are working diligently and are striving to continue making strides toward achieving our goal of establishing a global presence across these five regions by 2030 . In 2016, Hinodeya expanded into the U.S. and began operations in San Francisco's Japantown. Since then, to date, the company has operated four directly managed restaurants in San Francisco, California, one directly managed restaurant in Dallas, Texas, and its first directly managed restaurant in Los Angeles is a popular ramen restaurant opening in September. The company is still in the process of growing. We are also working hard to achieve our goal of five global regions （ North America ・ Latin America ・ Asia ・ Oceania ・ Europe by 2030 ） and to continue to make great strides toward this goal.
